This guide to food conversion tables for cooking and baking is designed to provide you with easy conversion charts.

Baking, and cooking conversions allow you to translate a recipe measurement in a straightforward, and accurate way. 

In the early days of cookbooks, measurements were vague at best.

Recipes would routinely call for a spot of this ingredient or a handful of that, making them ambiguous at best.

Measurements calling for sufficient salt, a saucer of something, or a mug’s worth were all quite vague.

If the person making the recipe was not familiar, to a certain extent, with cooking, and ingredients, it could easily lead to disaster.

This needed to be changed in order for recipes to be replicated seamlessly.

Measuring Around The World

Most of the world uses the metric system for weight measurements of dry ingredients.

This is true also for liquid measuring in much of the world which uses liters for liquids.

In the United States cups, ounces, teaspoons, tablespoons and fluid ounces are most commonly used.

Because of these differences it’s important to be able to convert a recipe accurately in order to get the best results.

Is Using Weight or volume measures best?

Using weight measures is considered the more accurate method, especially for baking.

Volume is how much space something occupies and weight of course is how heavy something is.

Many ingredients can be affected by temperature and humidity which can affect volume, but weights will remain the same.

Believe it or not many measuring cups and spoons vary in their volume, making the replicating of a recipe difficult.

Baking is a much more exact science, measurements need to be correct to the smallest part.

Professional chefs and bakers look for consistency above all else when preparing an order for a customer.

People want to know that what they order in a restaurant each time will be exactly the same as the last time.

Weighing ingredients is a lot easier and quicker than using measuring cups and going by volume.

What Kind Of Scale To Use

The most accurate type of scale for kitchen use is going to be a digital scale that will register a clear number to the cook.

It is good to have a scale that can easily handle measurements up to five or six kilos (roughly 11 to 13 pounds).

Using grams or ounces is up to you, however, when using grams it will be easier to scale a recipe up or down.

My favorite scale on the market is the OXO Good Grips Food Scale, I believe it to be head and shoulders above the rest.
