- 3 lbs Figs
- 2 cups Sugar
- 4-5 tbsp Lemon Juice fresh
Slice figs into quarters, and place in a heavy bottomed pan.
Add the sugar and lemon juice.
Heat over medium heat, stirring occassionaly.
Continue cooking until temperature reaches 220ºF (105ºC), about an hour.
If you wish to can, follow canning instructions.
Otherwise cool to room temperature and store in the fridge.
