Ingredients

  • 100 Garlic Cloves (about 2 cups) roasted
  • 3 tbsp Olive Oil
  • ½ tsp Salt
  • 6 cups Vegetable Broth
  • 1 Coconut Milk can
  • 2 tbsp Lemon Juice

Instructions

  • Add the roasted garlic, olive oil, lemon juice and coconut milk in a saucepan over a medium heat. Stir together.
  • Add the vegetable broth and bring to the boil.
  • Blend the soup until smooth.
  • Add the salt.
  • Serve!
