- 100 Garlic Cloves (about 2 cups) roasted
- 3 tbsp Olive Oil
- ½ tsp Salt
- 6 cups Vegetable Broth
- 1 Coconut Milk can
- 2 tbsp Lemon Juice
Add the roasted garlic, olive oil, lemon juice and coconut milk in a saucepan over a medium heat. Stir together.
Add the vegetable broth and bring to the boil.
Blend the soup until smooth.
Add the salt.
Serve!
