For the Vinaigrette
- ½ cup Olive Oil
- ¼ cup Apple Cider Vinegar
- ¼ cup Orange Juice unsweetened
- 2 tbsp Honey
- 1 tbsp Lemon Juice
- ½ tsp Salt
For the Salad
- 1 Apple sliced thinly
- 1 tbsp Lemon Juice
- 8 oz Salad Leaves mixed leaves
- 1 cup Walnuts toasted
- ¾ cup Cranberries dried
- 4 oz Shanklish or Other Blue Cheese
For the Salad
Slice the apple into very thin slices and put into a ziplock bag with the lemon juice.
Shake the bag well making sure that all the apple slices are adequately coated with lemon juice.
Set aside.
Mix half the salad leaves, walnuts, cranberries and cheese.
Add half the dressing and mix well.
Add the remaining salad leaves, and the rest of the dressing.
Mix all the ingredients together and serve immediately.
