Ingredients

  • 3 cups Watermelon cubed
  • ¼ cup Olive Oil
  • 2 tbsp Balsamic Vinegar
  • ½ tsp Salt
  • 1 cup Cucumber diced
  • 1 cup Feta Cheese crumbled
  • ½ cup Spring Onions chopped
  • ½ cup Mint chopped

Instructions

  • Add oil, vinegar and salt to a small bowl and whisk well.
  • Add all other ingredients to a large bowl and mix well.
  • Pour dressing on to the salad and mix.
