- 3 cups Watermelon cubed
- ¼ cup Olive Oil
- 2 tbsp Balsamic Vinegar
- ½ tsp Salt
- 1 cup Cucumber diced
- 1 cup Feta Cheese crumbled
- ½ cup Spring Onions chopped
- ½ cup Mint chopped
Add oil, vinegar and salt to a small bowl and whisk well.
Add all other ingredients to a large bowl and mix well.
Pour dressing on to the salad and mix.
