- 1¼ lb Chicken Breast sliced into thick pieces
- 3 tbsp Olive Oil
- 1 Onion diced
- 6 Garlic Cloves minced
- ¼ tsp Crushed Red Pepper
- 1 can Diced Tomatoes
- ⅓ cup Heavy Cream
- ½ cup Fresh Basil chopped
- ½ tsp Salt
- ½ tsp Black Pepper
Heat oil in a pan. Brown chicken to give it some color. Remove chicken before it is cooked through.
Add onions and saute until softened and translucent.
Add garlic, salt, pepper and crushed red pepper.
Add tomatoes and mix well.
Add cream and mix until you have a uniform color.
Put chicken back in the pan and cook on low heat until tender and done, about 15 minutes.
Remove from heat and add the basil, and stir in. Serve hot with rice.
