Burghul Salad

Enhance your salad with nutty burghul and you won't be disappointed!

Ingredients

  • 1 cup Burghul
  • 2 cups Water
  • 1 tsp Salt
  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice
  • ¼ Romaine Lettuce sliced
  • 2 tbsp Capers
  • 1 Tomato diced
  • 6 Green Onions sliced
  • 6 Mushrooms sliced
  • 2 Cucumbers small
  • 1 cup Chickpeas

Instructions

  • Pour the burghul, water and salt into a bowl.
  • Mix together and leave to soak for 20 minutes.
  • In a salad bowl, add the soaked burghul and mix together with the olive oil.
  • Add romaine lettuce, capers, tomato, green onions, mushrooms, cucumbers and chickpeas.
  • Mix together and serve.
