Cauliflower Stir Fry

Ingredients

For the Stir Fry

  • 4 cups Cauliflower Rice
  • 2 tbsp Sesame Oil
  • 1 cup Carrot cubed
  • ½ cup Red Bell Pepper chopped
  • 1 cup Broccoli florets
  • 6 Green Onions chopped
  • 3 Garlic Cloves minced
  • ¼ cup Cashews
  • 1 inch Ginger chopped
  • 4 Chicken Breasts

For the Chicken Marinade

  • ¼ cup Soy Sauce
  • 4 tbsp Sesame Oil
  • 2 tbsp Maple Syrup
  • 1 inch Ginger grated
  • 2 Garlic Cloves minced

For the Stir Fry Sauce

  • ¼ cup Soy Sauce
  • ¼ cup Water
  • ½ tbsp Maple Syrup
  • 1 tsp Pepper Flakes
  • ½ tsp Ginger powder

Instructions

  • Mix all ingredients for the marinade together in a bowl.
  • Slice the chicken breast into strips and marinade in your mix for at least 4 hours (preferbaly overnight).
  • Over a medium heat, add the sesame oil to a large saucepan or wok.
  • Add the carrots, bell peppers, broccoli, onions, ginger and garlic. Sauté until the carrot begins to soften.
  • Add the cauliflower rice to the pan and cook for 3-4 minutes.
  • Add the marinated chicken breast and stir fry sauce, and cook until the chicken is done.
  • Remove from heat.
  • Sprinkle cashews on top and serve.
