Ingredients

  • 8 Eggs
  • 4 Spring Onions chopped
  • ½ cup Parsley chopped
  • ½ cup Mint Leaves chopped
  • 1 clove Garlic minced
  • 1 Green Chili chopped
  • 1 tsp Salt
  • ½ tsp Cumin
  • ¼ tsp Black Pepper ground
  • 1 tbsp All Purpose Flour
  • 4 tbsp Olive Oil

Instructions

  • Heat the olive oil on high.
  • Crack the eggs into a bowl.
  • Add all other ingredients.
  • Whisk. 
  • Turn heat to low.
  • Pour mixture into hot oil.
  • Cook until cooked halfway through, turn over, cook until done.
