Ingredients

  • 12 Beets medium
  • 4 tbsp Olive Oil
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Pomegranate Molasses

Instructions

  • Preheat oven to 400ºF (200ºC).
  • Cut beets into 1½ inch cubes.
  • Mix all other ingredients in a large bowl.
  • Mix beets with all other ingredients until the beets are well covered.
  • Pour the contents into a baking dish.
  • Bake uncovered for 30 to 40 minutes stirring once at about 15 minutes in.
  • Once beets are fork soft remove from the oven and serve.
