- 12 Beets medium
- 4 tbsp Olive Oil
- 2 tsp Salt
- 1 tsp Black Pepper
- 2 tbsp Balsamic Vinegar
- 1 tbsp Pomegranate Molasses
Preheat oven to 400ºF (200ºC).
Cut beets into 1½ inch cubes.
Mix all other ingredients in a large bowl.
Mix beets with all other ingredients until the beets are well covered.
Pour the contents into a baking dish.
Bake uncovered for 30 to 40 minutes stirring once at about 15 minutes in.
Once beets are fork soft remove from the oven and serve.
