Mix all ingredients for the marinade together in a bowl.
Slice the chicken breast into strips and marinade in your mix for at least 4 hours (preferbaly overnight).
Over a medium heat, add the sesame oil to a large saucepan or wok.
Add the carrots, bell peppers, broccoli, onions, ginger and garlic. Sauté until the carrot begins to soften.
Add the cauliflower rice to the pan and cook for 3-4 minutes.
Add the marinated chicken breast and stir fry sauce, and cook until the chicken is done.
Remove from heat.
Sprinkle cashews on top and serve.
